Pair dragon fruit—the pink, mildly sweet flesh of the funky tropical fruit—with mini dragon egg-sized scoops of melon sorbet and effervescent Prosecco. To make, purée 12 ounces of thawed dragon fruit in a blender until smooth. Pour into the bottom of six 8-ounce glasses. Top the purée with small scoops of melon sorbet, using about 1/3 cup of sorbet per serving. Top each glass with 2 ounces (1/4 cup) of soda or sparkling wine and serve immediately.
