Roasting transforms fresh cauliflower into a delightful side dish that you’ll find yourself making over, and over again. This mild vegetable absorbs whatever seasonings you throw at it. For simplicity, we tossed the cauliflower with a bit of oil, salt, and cayenne. After a quick roast, light smash, and sprinkling of cheese you get an irresistible dish that's crisp and golden on the exterior, yet tender and creamy inside.

To toast nuts, preheat oven to 350°F. Spread nuts in a shallow baking pan. Bake, shaking pan once or twice, until lightly browned, 5 to 10 minutes.
