1 3 1/2- to 4-lb whole broiler-fryer chicken

1/2 cup ranch salad dressing
Directions

Loosen the skin over the breast and thighs of the chicken. Spread 1/2 cup ranch salad dressing generously under and over the skin and in the cavity.

Skewer neck skin to back, tie legs to tail, and twist wing tips under back. Place chicken, breast side up, on a rack in a shallow roasting pan.

Preheat oven to 375°F. Roast chicken 1 hour. Cut string between drumsticks. Roast until chicken is done (at least 175°F in thigh), 15 to 30 minutes more.

Tent with foil; let stand 15 minutes before carving.
