A fresh twist on a Sunday supper classic, this roast chicken gets its signature flavor from creamy ranch salad dressing, brushed generously under the skin and over the bird for maximum flavor. The dressing keeps the meat incredibly moist while infusing it with tangy herbs and savory richness. Roasting the whole chicken at high heat gives you golden, crisp skin and juicy, tender meat throughout. It’s an easy, crowd-pleasing dinner that feels both comforting and special, perfect alongside mashed potatoes, roasted vegetables, or a crisp green salad. Leftovers, if there are any, make fantastic sandwiches the next day.

Ingredients

  • 1 3 1/2- to 4-lb whole broiler-fryer chicken

  • 1/2 cup ranch salad dressing

Directions

  1. Loosen the skin over the breast and thighs of the chicken. Spread 1/2 cup ranch salad dressing generously under and over the skin and in the cavity.

  2. Skewer neck skin to back, tie legs to tail, and twist wing tips under back. Place chicken, breast side up, on a rack in a shallow roasting pan.

  3. Preheat oven to 375°F. Roast chicken 1 hour. Cut string between drumsticks. Roast until chicken is done (at least 175°F in thigh), 15 to 30 minutes more.

  4. Tent with foil; let stand 15 minutes before carving.
