It takes a few extra minutes to make the butter, but trust me, the flavor is WORTH it. Theyre perfect to go with any of your favorite meat main dishes!FREQUENTLY ASKED QUESTIONS:What is cowboy butter? I honestly dont know how it got the name. My guess is someone gave it a cute name to catch peoples attention (people love fun recipe names, right?) but no connection to anything cowboy. It is a compound butter made with fresh garlic, dijon mustard, paprika, lemon, red pepper flakes (optional) and parsley. What kind of potato works best? I think pretty much any potato would work. In my pictures, youll see I used a red gold baby potato, but yellow baby potatoes, regular red potatoes and probably even russets would work nicely. How else can I use this Cowboy Butter mixture? This melted cowboy butter is a delicious match for potatoes, but would also work well on grilled meats, like Grilled Chicken Legs, or other protein sources like shredded chicken or as an alternative on garlic butter steak bites. Add potatoes to the bottom of a 913 or similar sized baking dish. Season with salt and pepper and pour the melted cowboy butter over the potatoes, toss to coat. Bake in the oven for 35-45 minutes, tossing halfway through, until the potatoes are cooked through with crispy edges.Sprinkle with minced parsley.
