MaryannFrequently Asked QuestionsI dont want to do a brown butter frosting, what else can I use? If you dont want a brown butter frosting, you can skip the browning part and just use the same amount of (softened to room temperature) butter.Or purchase a store-bought frosting. Can I use a different cake mix? Sure, if you dont have a French vanilla cake mix, you can use a white cake mix or yellow cake mix. You can even use Homemade Yellow Cake Mix. Can I use frozen peaches instead of fresh peaches? You can use the same amount of frozen peaches as fresh, but thaw them first then blot them before using. If you dont remove some of the moisture, the cake may not bake properly as the batter may be too wet. Can I used canned peaches? Yes. The same amount of canned peaches can be used, but again youd need to drain them really well. The texture will also be different, so just keep that in mind. I havent tested this with canned peaches so I am not exactly sure how much to use. Perhaps two large cans but this will be one you will have to experiment with on your own to see how much. How do you blanch and shock peaches? Now, let me just say, you can peel peaches like you peel a potato with a peeler. However, blanching peaches is a great way to remove the skin if you dont have a peeler and its easy. Heres how to do it step-by-step: Use a sharp knife to make a small X on the bottom of each peach, not too deep, just through the skin to help loosen the skin more easily once theyre blanched.Then, bring a large pot of water to a gentle boil and gently transfer the peaches into the water.Boil the peaches for 3060 seconds, just until you see the skin around the X starting to peel back.Quickly transfer the peaches into a bowl of ice water using a slotted spoon or tongs. Be very careful as the peaches will be HOT. Let the peaches sit for about 1 minute in the ice water to stop the cooking process.Once the peaches have cooled, peel off the skin with a knife or your hands if you can handle them. The skin should come off easily.Finally, cut the peaches in half, remove the pits, and slice or chop them as needed for the recipe. Do I need to use the ingredients listed on the cake mix box? Yep. You will be using the ingredient amounts on the back of the box mix to make the cake. To make a slightly richer cake, replace the water with milk and oil with melted butter. How do I stop the peaches from sinking to the bottom? If you are concerned your peach slices will sink to the bottom of the cake, add 2 Tablespoons of flour to the sliced peaches and toss to coat before laying them on the cake batter. However, I dont worry about it. Peaches are a heavier fruit and they can still sink despite your best efforts. Sinking to the bottom dont affect the taste at all and I have never had a single person complain that its not aesthetically pleasing because peaches were on the bottom ha! However, if that bothers you, then just go by my instructions above. What if I brown the butter ahead of time? If you brown the butter and chill it ahead of time, you will need to soften it (not melt) before making the frosting. Do I make the Jell-o? No. You dont need to prepare the Jell-O all all before adding to the cake batter. We are keeping it as a powder to add to the cake mix to boost that peach flavor. You do not have to add it if you do not want. How do I store Peach Cake with Brown Butter Frosting? Since there is dairy in the frosting, I would cover and store it in the refrigerator.You should be able to store the cake covered for 3 days in the refrigerator. Though the moisture from the peaches may make the bottom of the cake a little extra moist. It can also be frozen for up to 3 months. However, if you really want one that gets folks talking, try this Frito Corn Salad. This stuff is surprisingly good! Its one of those foods that everyone will want the recipe for so be prepared!So good! Huge hit at our BBQ! Nothing left! NikiFrequently Asked QuestionsHow is this served? This can actually be served a variety of ways. You can serve as a side dish or an appetizer (as a dip). I could eat this stuff with a spoon as a side dish (or better yet, try using it to top tacos or in taco salad so yum!) but most people serve it as a dip. You can use tortilla chips, Frito scoops, toasted pita bread or simply some Ritz or Club crackers. Can I use canned corn? Yes you can. If you dont have time to thaw out a bag of corn, then use 2 (15 ounce) cans of corn that are drained really well. I thought this was made with Chili Cheese Fritos? This is where you can have some fun! Try switching out the flavors by using chili cheese flavor or BBQ flavored Frito corn chips. I prefer the good ole original but you can really change up the flavors by using different flavored Fritos. Do I have to use the whole bag of Fritos? Some folks put in half the crushed Fritos at the time they make it, then add the other half in right before serving. But you dont have to use all of the Fritos. Its a matter of preference. How do I store leftovers? Keep in mind, the Fritos will get soft as this sits so while you can cover and store this in the refrigerator for up to 3 days, the Fritos will soften and you wont get that crunch (unless you choose to just add a bit of the Fritos as you go along.) Ingredients Needed: (See Recipe Card Below For The Full Recipe) sweet corn as youll see in my ingredient image below, I just picked up a bag of frozen corn and let it thaw. It does not need to be steamed or cooked in a pot first. cheddar cheese you can have a lot of fun with the cheese here. If you want to give it a little more kick, try using Pepper Jack cheese. green pepper if you find green pepper a bit too strong, you could use red, yellow or orange pepper. You could even switch it out for celery.red onion if you find the red onion flavor too strong you have a couple of options. You could soak the chopped onion in ice water for a few minutes. This takes out the pungency of the onion but still gives you good flavor. Just dry them on a paper towel before adding them into the rest of the mixture.mayonnaise you could use plain Greek yogurt or even sour cream. Just keep in mind, sour cream or Greek yogurt will gave this a slightly tangier flavor.taco seasoning you can pick up a packet of store bought or make your own Homemade Taco Seasoning.Fritos corn chips some folks love to use the Chili Cheese Fritos. I tend to find the flavor a bit too overpowering with the other flavors (since were also adding taco seasoning) but it is definitely a taste preference. Some folks absolutely swear by the Chili Cheese flavored ones but I prefer the traditional.
