What to Know About Induction Ranges Before Shopping
Size and Oven Capacity
The standard range size is 30 inches, but if you're planning a kitchen remodel, you may opt for a larger 36-inch range. While a larger range will provide more space on the cooktop, it doesn't always mean a greater oven capacity; many 30-inch ranges include ovens that are the same size, or larger, than their 36-inch counterparts. In general, range ovens measure around 5 cubic feet.
Power
Induction cooktop power is measured in watts, and each burner on the cooktop often offers a different wattage range. In general, we recommend ensuring each burner offers up to 2,000 to 3,000 watts per zone. "Some models offer a boost setting to increase burner power which comes in handy for a stir fry or if you need to quickly heat a large stock pot," Petrino Ball says.
Compatible Cookware
Since induction cooking uses electromagnetism to generate heat, the cookware used with the appliance must also have magnetic properties.
“The best pans to use on an induction cooktop are those that are induction-ready, like enameled steel, cast iron, and stainless steel designed for induction cooking,” says Emily Spaeter, integrated brand manager at Whirlpool. “Non-compatible pans include those made from glass, aluminum, and ceramic materials.”
You can test your existing pans by placing a magnet on the bottom. If it sticks, it likely can be used for induction cooking.

What is the difference between electric or gas and induction cooking?
Compared to electric and gas ranges, induction ranges are more energy efficient. But there are also benefits you’ll notice in everyday cooking and cleanup.
“Many consumers love cooking on induction for its speed, precision, and control," says Petrino Ball. "Some brands even make it possible to set the induction cooking surface to an exact temperature,” she adds.
A flat, glass cooking surface is easy to clean, meaning “you won’t find those burnt-on circles from previous spillovers or need to soak heavy grates in soapy water to remove debris,” Petrino Ball says.
Melissa Clark, New York Times food writer and cookbook author, says she typically chooses her induction burner over her gas burner. “It gets just as hot—if not hotter—than my gas burners, searing steak beautifully in a cast iron skillet,” she says. “It keeps the kitchen cooler in summer since it only heats the pan, not the room, and there's no gassy smell or clicking noises when the burner lights.”
