Save this cheesy chicken dip recipe for the next time you're hosting a party. The combination of diced green chiles, cheddar, and shredded chicken gets even more delicious with a creamy sour cream sauce. Once baked, serve the dip warm with chips, crackers, or fresh veggies. If you're heading to a party, we're also including a simple slow cooker method.

Ingredients

  • 6 cups shredded cooked chicken

  • 12 oz. shredded cheddar cheese, divided

  • 8 oz. cream cheese, softened

  • 1 cup sour cream

  • 1 cup mayonnaise

  • 7 to 8 oz. canned diced green chiles, drained

  • 1 tsp. garlic salt

  • 1/2 tsp. black pepper

  • Sliced green onions and/or chopped cilantro, for garnish

  • Tortilla chips, butter round crackers, corn chips, and/or veggie sticks, for serving

Directions

  1. Preheat oven to 350°F. Lightly coat a 13x9-inch baking dish with nonstick cooking spray.

  2. In a large bowl stir together shredded chicken, 8 ounces cheddar cheese, cream cheese, sour cream, mayonnaise, green chiles, garlic salt, and pepper until well combined. Transfer mixture to prepared baking dish. Top with remaining 4 ounces shredded cheddar.

  3. Bake for 30 to 35 minutes or until heated through and cheese is melted. Garnish with green onions and chopped cilantro. Serve with desired chips, crackers, and/or veggies.

How to Make Disappearing Chicken in the Slow Cooker

Follow recipe as written placing mixture in a 6-qt. slow cooker. Cook on high for 1 1/2 hours or on low for 3 hours.
