1 1/2 cups whole milk

3/4 cup whipping cream

2 Tbsp. granulated sugar

10 oz. 60% to 70% bittersweet chocolate, finely chopped

1 tsp. vanilla

In a heavy bottomed medium saucepan, heat milk, cream and sugar over medium-low until just simmering. Remove from heat.

Add chocolate. Let stand 5 minutes. Stir until chocolate is melted and smooth. If necessary, return pan to low heat to gently warm the mixture to melt the chocolate.

Pour into demitasse or espresso cups. Top with whipped cream, if desired.
