The Story Behind the Spaghett

Reed Cahill, a bartender at Wet City Brewing in Baltimore, Maryland, is credited with first developing this clever twist on the classic. P.J. Sullivan, who owns Wet City with his brother Josh, says the drink (known there as a Spagett, without the H) was born during a staff brainstorming session before the brewery opened its doors in 2016.

“Before we opened, we did a study session with the bar staff to come up with our cocktail menu,” Sullivan says. “If you've ever participated in one, you know there's a lot of back and forth, meaning a lot of drinks being had. At the end of this session the suggestion came from Reed Cahill and it fit Wet City's persona nicely. Crazy idea, maybe, but when we tried it, it was a no-brainer.”

Sullivan describes the Spaghett as an “ironic Aperol Spritz.” The cocktail’s name is a tongue-in-cheek reference to a sketch from The Tim and Eric Awesome Show on Adult Swim. “An Aperol Spritz is an aperitivo-driven fancy cocktail. And if you've seen Tim and Eric's skit Spagett, you'd get where we were coming from. It's the opposite: a lowbrow Italian aperitivo-driven cocktail jumping out to spook ya,” Sullivan says.

The Spaghett is still extremely popular at Wet City to this day: The brewery recently celebrated “Spagett Day” on August 6.

How Did the Spaghett Get So Popular?

The Spaghett went from being a playful plot twist to a full-on trend over the past few years. The drink continues to pop up on bar menus across the country. According to Business Insider, data from Square show that orders for Spaghetts in the first half of 2025 were up by 65% from last year, and since 2022, Spaghett orders are up by 1000%. This summer, Miller High Life even introduced the “Spaghett-sicle,” a push pop version of the drink.

Sullivan traces the buzz back to 2019, when the drink was written up in Bon Appetit. “It was already a thing here, but the expanded reach came from that article,” Sullivan says. “I think people like it because it's simple but good.”

During uncertain economic times, the Spaghett is also gaining traction as a more affordable version of the perennially popular Aperol Spritz. No Prosecco? No problem. Simply sub in a bottle of Miller High Life.

How to Make a Spaghett

The Spaghett is extremely easy to make at home—the drink only calls for three ingredients, and there’s no fancy glassware required. Sullivan says building the cocktail directly in a bottle of Miller High Life is an essential part of the experience.

Ingredients

  • 1 12-oz. bottle Miller High Life or other light lager
  • ¾ oz. Aperol
  • ¾ oz. fresh lemon juice

Directions

  1. Take a sip or two of beer, leaving room for about 2 oz. of liquid in the bottle (just below the label on the neck).
  2. Add about ¾ oz. Aperol.
  3. Add about ¾ oz. fresh squeezed lemon juice.
