Spicy Cabbage
Spicy Cabbage Is flavored with bacon, onion, green pepper, and Rotel tomatoes. It can be made in a skillet and it makes a wonderful southern side dish. Cabbage is one of my favorite side dishes. This spicy cabbage dish goes well with pork chops or baked chicken. Ingredients Needed 4 slices thick-cut bacon– or use 6 slices regular bacon. Diced Onion– use sweet, yellow, or white. Diced Green Bell Pepper– can use red bell pepper instead. Rotel Tomatoes– use “hot” Rotel Tomatoes to make it extra spicy. Sugar– just a pinch to reduce the acidity of the tomatoes. Cook the onion and green pepper in the bacon grease until soft. Add remaining ingredients and simmer 10 to 15 minutes or until cabbage is completely cooked down. Sprinkle bacon on top and serve. Add More Flavor For additional flavor, you can add a few cloves of minced garlic. Add it after the onion and bell pepper are soft and cook for 1 minute before adding the remaining ingredients. Recipe Tips A small to medium cabbage will give you the 6 cups of cabbage needed for this recipe. The cabbage cooks in the liquid from the can of Rotel tomatoes. If you need more liquid, add a little water or chicken broth. If it is not spicy enough, just serve with some hot sauce. Leave the sugar out and you have a delicious low carb side. If you want to make it vegetarian, leave the bacon out and cook the onion and bell pepper in some butter or olive oil. Storage Leftovers will keep in an airtight container for 4 to 5 days.
