Inspired by giardiniera, an Italian-style relish, you can combine cauliflower with your choice of seasonal vegetables with a zesty marinade. Plan ahead, because it takes a couple of days to be ready for eating, but we promise it's totally worth it.
Tips for Making Gardenera with Any Vegetable
Here are some helpful tips to keep in mind when using your harvest or farmer's market haul to make this relish.
- We start the recipe with cauliflower, but from there 1 cup of mixed vegetables of any kind will work to fill your jar. If you use green beans, we recommend blanching them first for the best texture.
- Like spice? You can use as many or as few hot peppers as you like. De-seed jalapeños for a mild spice, or amp it up with serranos or any other hot peppers you have on hand.
