If you have never had a true Southern deep dish cobbler, you are in for a real treat. It’s a very unique dish and one my family has loved for generations. My Grandmother made this dish, and my Mother has, of course, carried on that tradition. Our whole family loves any blackberry desserts, and this one may be our favorite.

What is a deep dish cobbler?

A true Southern deep dish cobbler is made by baking thin pieces of pastry and layering them throughout the juicy berries. Around our family, we simply called it a deep dish cobbler. By baking the pastry, it is crispy; then you layer it with the blackberries and juice, and it starts to soak it up, and let me tell you… it’s a new level of delicious!

Can I use this method for other fruit cobblers?

Of course, you could use this method to make blueberry, peach, or really any kind of cobbler. The juice is important for this method, so it can soak into the cracker-like texture of the pastry.

This cobbler needs to sit in the refrigerator for a few hours or even overnight so it can soak up the juices. We make this one a day in advance, then spoon out a serving, heat it up in the microwave, and top it with a big scoop of ice cream! I will say.. this deep dish cobbler is good cold too!

Ingredients for Cobbler

  • 5 to 6 cups blackberries fresh or frozen
  • 1 1/2 cups water
  • 2 tablespoons butter
  • 1 1/2 cups sugar
  • 1 tablespoon cornstarch

Crust Ingredients

  • 3 cups all-purpose flour
  • 1 teaspoon salt
  • 1/2 cup oil we use canola or olive
  • 3/4 cup buttermilk or can us regular milk
  • 2 tablespoons sugar
  • Mix berries, butter, cornstarch, sugar and water together and bring to a slow boil on stove top. Let boil a couple of minutes, turn off stove and let cool. This will not be thick.

  • In a large bowl with a spoon mix together the flour, salt, oil, milk and sugar until makes a ball. Pinch off pieces of the dough and roll out as thin as possible.

  • Spray a cookie sheet or flat pan with cooking spray and add pieces. Cook in a preheated 400 degree oven for about 10 minutes until brown. You will probably make about 3 pans of these pieces of cooked pastry to total 12 to 15 pieces depending on the size you make them.

  • Once you have cooked all the pastry pieces start layering them in a serving bowl ladling the berries over the dough. Once you have finished put the cobbler in the refrigerator for several hours or overnight. The pastry will soak up all the juices from the berries.

  • Heat up each serving in the microwave, top with ice cream and enjoy!
