Soft peanut butter bars topped with rich chocolate frosting were always the dessert everybody hoped would be on the lunch tray. Simple, old-fashioned recipes like this never go out of style, and one bite brings back all those memories of school lunches and homemade treats straight from the cafeteria kitchen.

These are no-bake treats and only a few ingredients, which makes them even better. Takes no time to put these together and everyone loves them.

Swaps and Additions

We use creamy and always have, but I am sure there are people who use crunchy, we find that the smooth creamy works very well. We also make this with semi-sweet chocolate chips, which is how we like them, but you can easily use milk or dark chocolate if you like. We use salted butter in this recipe, but it will work just fine with unsalted. Also, we just spray the pan with cooking spray, but you can use parchment paper if you prefer.

Tips

Someone commented that scoring the bars made them easier to cut and you may want to do that. Personally, we like to take them out of the fridge and just let them sit about 20 minutes, and they cut fine, but either will work.

Old-fashioned Lunch Lady Peanut Butter Bars topped with rich chocolate frosting just like the classic school cafeteria dessert from years ago.

Course Dessert

Cuisine American, southern

  • 3/4 cup of butter – melted
  • 2 cups of confectioners sugar
  • 1.5 cups of graham crackers crushed, about 11-12 sheets of graham crackers
  • 1 cup of creamy peanut butter
  • 1.5 cups of semi-sweet chocolate chips
  • Spray a 9X9 baking pan with cooking spray or line with parchment paper.

  • In a large bowl combine confectioners sugar, crushed graham crackers and peanut butter. Top with melted butter and mix well with a spoon. Press mixture into pan.

  • Heat chocolate chips in microwave safe bowl until fully melted. I melted them for about 20 seconds at a time, stir and 20 more seconds, until fully melted. Pour over peanut butter mixture and spread evenly.

  • Chill in refrigerator for at least 3 hours until hardened. You may need to let sit for a few minutes before you can cut them after they have hardened.
