If you love a simple but delicious dish, this is one for you! Easy to make, not a lot of prep work and so good! We love the cajun seasoning in this dish, but you can easily switch it up to suit your taste. Yes, we make this dish in bacon grease because it gives it a wonderful flavor. Then we crumble some on top and that just takes it all up another level!

Easy Swaps and Additions

We love a simple and versatile dish and this is one you can easily make your own. Switch up the seasoning at any time. We love all types of seasonings, and you can add whatever you like. We use fire-roasted tomatoes; if you have just regular diced tomatoes, that will work too. You can use frozen vegetables and you don’t need to thaw them. You could add peas, green beans, etc to this dish. I also think this would be wonderful served over rice. Throw in some ground beef if you like for a complete meal.

This easy skillet dish is loaded with corn, okra and diced tomatoes and topped with crumbled bacon!

Prep Time 15 minutes

Cook Time 30 minutes

Total Time 45 minutes

Course Side Dish

Cuisine American, southern

  • 4 slices bacon
  • 1/2 cup chopped green onion or regular onion
  • 1 cup chopped green pepper
  • 1/2 cup chopped celery
  • 1 clove of garlic chopped or minced
  • 1 cup okra can use frozen or fresh and no need to thaw if frozen
  • 2 cups corn can use frozen or fresh and no need to thaw if frozen
  • 1 14.5 ounce can fire-roasted diced tomatoes, undrained
  • 1/4 cup water
  • 2 teaspoons Cajun seasoning
  • 1/2 teaspoon salt
  • Pinch of cayenne or few drops of hot sauce optional
  • Cook bacon until crispy in a skillet on top of the stove. Remove, drain and set aside

  • Keep 2 to 3 tablespoons of the bacon drippings in the pan. Saute’ the onion, green pepper, celery and garlic in the bacon drippings.

  • Add the okra, corn, diced tomatoes, water, Cajun seasoning and salt. Cover and simmer about 30 minutes until flavors are blended. Crumble bacon on top before serving.
