Why You Will Love Mississippi Mud Potatoes

Honestly, the name is a little odd, but the taste is amazing. If you love a loaded baked potato, you will love this casserole-style recipe. Loaded with butter, cheese, and bacon, this side dish will quickly become a family favorite! This dish will go with just about anything, and it’s super easy to make and reheats really well, too. We made this as a side to our delicious Brown Sugar Meatloaf, and it was a big hit.

What Potatoes Do You Use?

Yukon Gold potatoes are best for this dish; they cook well and have great flavor. You could use other potatoes if you like, red, russet, or Idaho. We also peel the potatoes for this dish, but you really don’t have to if you prefer the skin.

Do these Mississippi Mud Potatoes Reheat Well?

Yes, they do reheat well and will keep for a few days in an air-tight container. We just reheated them in the microwave and found them to be delicious!

These Mississippi Mud Potatoes are loaded with cheese, bacon, and flavor. An easy potato casserole that’s always the first to disappear!

Prep Time 20 minutes

Cook Time 1 hour

Total Time 1 hour 20 minutes

Course Side Dish

Cuisine American, southern

  • 8 large Yukon Gold yellow potatoes peeled and cut into cubes
  • 1 large yellow onion peeled and chopped
  • 2 teaspoons minced garlic
  • 1 pound bacon cooked and crumbled
  • 1 1/4 cups mayonnaise I used Dukes
  • 1 1/4 cups shredded cheddar cheese It’s best to shred your own. It melts better
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 green onions chopped
  • Combine all ingredients in a large bowl except green onions.

  • Mix well with spoon. Pour into a greased 9 x 13 baking baking dish.

  • Cover and bake in a preheated 350 degree oven for one hour or until potatoes are done.

  • Remove and garnish with chopped green onions.

  • Makes approximately 8 to 10 servings.

ou can use any potatoes. We just like the Yukon Gold.
You could halve this recipe. You could increase spices to your taste.
