Give sorghum the rice pudding treatment by slowly simmering the whole grain in chai-infused milk. A finishing drizzle of sorghum syrup brings a sweet, caramellike flavor. Serve this treat immediately after cooking. In testing, we found reheated leftovers were a bit too chewy the second time around. Top each serving with nuts and/or dried fruit.
What Is Sorghum Syrup?
Sorghum syrup is made by cooking down the juice of the sorghum plant into a rich, dark liquid. It resembles molasses but is sweeter and has slightly less body. Sorghum syrup is commonly used in the South like honey or maple syrup. Drizzle over pancakes or biscuits, or use as a sweetener in vinaigrettes and cocktails.

Ingredients

2 cups whole milk

1/2 cup whole grain sorghum, rinsed and drained

2 cups chai tea

1/2 tsp. vanilla

3 egg yolks
-
2 Tbsp. sugar
-
2 Tbsp. sorghum syrup

Chopped pistachios, chopped dried apricots, and/or dried cranberries (optional)
Directions

In a large saucepan combine milk, sorghum, tea bags, and vanilla. Bring to boiling; reduce heat. Cover and simmer until sorghum is tender, 50 to 60 minutes, removing and discarding tea bags after 10 minutes of cooking.

In a medium bowl whisk together egg yolks and sugar. Gradually whisk about 1/2 cup of the hot sorghum mixture into yolk mixture; return all to saucepan. Cook and stir over medium just until mixture is simmering (195°F) and slightly thickened (pudding will continue to thicken as it cools). Remove from heat. Let stand 10 minutes.

Serve immediately topped with sorghum syrup and, if you like, pistachios and/or dried fruit.
