With three decadent layers of chocolate, these bars are the ultimate treat. They start with a crunchy, yet tender crust made from chocolate sandwich cookie crumbs. Next, a rich, frosting-style filling makes up the middle layer. And to bring it all together, melted chocolate is spread over the top sealing the irresistible layers together into one delicious dessert.

Ingredients

  • Nonstick cooking spray

  • 30 chocolate sandwich cookies with white filling

  • 1/2 cup salted butter, melted

  • 1/2 cup salted butter, softened

  • 1 (4-serving-size) pkg. chocolate instant pudding and pie filling mix

  • 3/4 cup heavy cream

  • 3 cups powdered sugar

  • 8 oz. bittersweet or semisweet chocolate, chopped

  • 2 Tbsp. shortening

  • Grated bittersweet or semisweet chocolate (optional)

Directions

  1. Preheat oven to 350°F. Line a 13x9-inch baking pan with foil, extending foil over edges. Lightly coat foil with cooking spray.

  2. For crust, place cookies in a food processor. Cover and process until fine crumbs. In a medium bowl stir together cookie crumbs and melted butter. Press mixture evenly into prepared baking pan. (Use the bottom of a ½-cup dry measuring cup to press cookie mixture evenly into pan.) Bake 10 minutes. Cool crust completely in pan on a wire rack, about 30 minutes. Crust will be crisp

  3. For filling, in a large bowl beat softened butter with a mixer on medium 30 seconds. Add pudding mix and cream; beat until smooth. Gradually beat in powdered sugar. Beat on medium to high until light and fluffy, 1 to 2 minutes. Carefully spread filling over crust.

  4. For topping, in a medium bowl microwave chocolate and shortening, stirring every 30 seconds, until melted, 1½ to 2 minutes. Carefully spread over filling. Cover and chill until firm, about 2 hours. Use foil to lift uncut bars from pan. Cut into bars. If you like, sprinkle with grated chocolate.
