Jalapeño Popper Deviled Eggs are a delicious party bite that will keep all of your guests satisfied. They’re loaded with flavor, packing mouthwatering pepper Jack cheese, mayo, jalapeño peppers, green onions, and bacon onto one delicious hard-cooked egg. In under an hour, you can have these party bites ready to serve. Just make sure you whip up enough because they’re going to disappear from your appetizer table fast.

Ingredients

  • 1/2 cup shredded pepper jack cheese

  • 12 hard-cooked eggs

  • 3 Tbsp. mayonnaise

  • 3 Tbsp. cream cheese, softened

  • 1 fresh jalapeno pepper, seeded and finely chopped

  • 3 Tbsp. sliced green onions

  • Salt and black pepper

  • 3 slices bacon, crisp-cooked and finely crumbled

  • Sliced fresh jalapeno pepper

Directions

  1. Preheat oven to 400°F. Line a baking sheet with parchment paper. Place about 1 Tbsp. of the shredded cheese on prepared baking sheet; pat into a 2-inch circle. Repeat with remaining cheese, spacing circles 2 inches apart. Bake until bubbly and light golden, 7 to 8 minutes. Let stand on baking sheet until cooled but still pliable, 1 to 2 minutes. Carefully peel cheese crisps off paper and cool completely on a wire rack. When cool, break cheese crisps into smaller pieces.

  2. Halve hard-cooked eggs lengthwise and remove yolks. Set whites aside. Place yolks in a small bowl; mash with a fork. Add mayonnaise, cream cheese, chopped jalapeño, and green onions; mix well. Season to taste with salt and black pepper.

    The green-gray ring around the yolk of a hard-boiled egg develops when the egg is cooked too long and hydrogen in the white combines with the sulfur in the yolk. It’s perfectly safe to eat.

  3. Spoon or pipe yolk mixture into egg white halves. Top eggs with cheese crisps, bacon, and sliced jalapeño. Makes 24 servings (1 egg half each).
