2 cups all purpose flour

1/2 cup unsweetened Dutch-process cocoa powder

1 tsp baking soda

1/2 tsp. salt

1/2 cup salted butter, softened

1 cup packed brown sugar

1 tsp. instant espresso coffee powder

1 egg
-
1 tsp. vanilla
-
1 cup buttermilk

1/3 cup miniature semisweet chocolate chips

1 recipe Marshmallow Filling

1/2 cup softened salted butter

7 oz. jar marshmallow crème

2 tsp. vanilla

1 3/4 cups powdered sugar
Directions
Wicked Good Whoopie Pies

Preheat oven to 350°F. Line cookie sheets with parchment paper. In a medium bowl combine flour, cocoa powder, baking soda, and salt.

In a large bowl beat butter with a mixer on medium 30 seconds. Add brown sugar and espresso powder. Beat until light and fluffy, scraping bowl as needed. Beat in egg and vanilla. Alternately add flour mixture and buttermilk, beating after each addition until combined. Stir in chocolate chips.

Drop dough by 1 1/2-Tbsp. portions on prepared cookie sheets. Bake until cookies spring back when lightly touched, 14 to 16 minutes. Cool completely on cookie sheets.

Spread bottoms of half of the cookies with Marshmallow Filling. Top with remaining cookies. Roll edges in jimmies. Makes 16 whoopie pies.
Marshmallow Filling

In a medium bowl beat 1⁄2 cup softened salted butter with a mixer on medium 30 seconds. Beat in one 7-oz. jar marshmallow crème and 2 tsp. vanilla until combined. Beat in 1 3⁄4 cups powdered sugar until light and fluffy.
