  • Leftover cooked or store-bought rotisserie chicken both work great in this recipe. We like a mix of light and dark meat.
  • For full control of the flavor, use homemade chicken broth. Of course, store-bought also works. Opt for low-sodium for this recipe. You could also use beef broth, which is traditional in French onion soup.
  • Frozen peas are an easy way to add a pop of freshness and green to this creamy casserole. You could also use frozen green beans or broccoli florets if you prefer.
  • After you caramelize the onions, dust them with a bit of flour. This helps thicken everything up. The key is to cook the flour before adding the liquids, so give the onions a good stir. The flour will smell nutty and turn golden when it's cooked.
  • If you can't find Gruyére cheese, Swiss will also work.
