  • Frozen peas are an easy way to add a pop of freshness and green to this creamy casserole. You could also use frozen green beans or broccoli florets if you prefer.
  • After you caramelize the onions, dust them with a bit of flour. This helps thicken everything up. The key is to cook the flour before adding the liquids, so give the onions a good stir. The flour will smell nutty and turn golden when it's cooked.
  • If you can't find Gruyére cheese, Swiss will also work.
