Ingredients

  • 4 cups kale, thinly sliced and stemmed

  • 2 cups Brussels sprouts, thinly shaved

  • 3 pears, halved, cored, and sliced

  • 1 orange, peeled and sliced

  • 1 cup kumquats, halved

  • 1 cup red seedless grapes, halved

  • 1/2 cup olive oil

  • 1/3 cup Prosecco or dry white wine

  • 1/4 cup white wine vinegar

  • 2 Tbsp. shallot, finely chopped

  • 1 Tbsp. fresh chives, chopped

  • 2 tsp. Dijon mustard

  • 1/2 tsp. salt

  • 1/4 tsp. black pepper

  • 1/4 cup pomegranate seeds (optional)

Directions

  1. In a large bowl combine kale and Brussels sprouts. Arrange pears, orange slices, kumquats, and grapes over greens.

  2. For dressing, in a screw-top jar combine next eight ingredients (through pepper); cover and shake until well combined. Drizzle dressing over kale mixture; toss to coat. If you like, sprinkle with pomegranate seeds.
