Ingredients
-
1/2 cup all purpose flour
-
2 eggs, lightly beaten
-
1 cup panko
-
1 (16-oz.) jar reduced-sodium dill pickle slices, drained
-
Nonstick cooking spray
-
1/4 cup mayonnaise
-
1 Tbsp. mustard, such as Dijon or Creole
-
1 tsp. fresh lemon juice
-
1/2 tsp. smoked paprika
Directions
-
Place flour in a shallow dish. In a second shallow dish place eggs. In a third shallow dish place panko. Pat pickle slices very dry. Dip pickles into flour, then eggs, then panko, pressing into crumbs to coat. Lightly coat pickles with cooking spray.
-
Working in batches if needed, arrange pickles in a single layer in air-fryer basket (do not overcrowd). Cook at 350°F until golden brown, 6 minutes.
-
Meanwhile, for dipping sauce, in a small bowl stir together mayonnaise, mustard, lemon juice, and smoked paprika. Serve sauce with pickles. Makes 6 servings (1/3 cup pickles and about 1 Tbsp. sauce each).
