Ingredients

  • 1/2 cup all purpose flour

  • 2 eggs, lightly beaten

  • 1 cup panko

  • 1 (16-oz.) jar reduced-sodium dill pickle slices, drained

  • Nonstick cooking spray

  • 1/4 cup mayonnaise

  • 1 Tbsp. mustard, such as Dijon or Creole

  • 1 tsp. fresh lemon juice

  • 1/2 tsp. smoked paprika

Directions

  1. Place flour in a shallow dish. In a second shallow dish place eggs. In a third shallow dish place panko. Pat pickle slices very dry. Dip pickles into flour, then eggs, then panko, pressing into crumbs to coat. Lightly coat pickles with cooking spray.

  2. Working in batches if needed, arrange pickles in a single layer in air-fryer basket (do not overcrowd). Cook at 350°F until golden brown, 6 minutes.

  3. Meanwhile, for dipping sauce, in a small bowl stir together mayonnaise, mustard, lemon juice, and smoked paprika. Serve sauce with pickles. Makes 6 servings (1/3 cup pickles and about 1 Tbsp. sauce each).
