Ingredients

1 (6-oz.) ribeye pork chop or beef sirloin steak, thinly sliced

Salt and black pepper

1 tsp. olive oil

1 (14.5-oz.) can reduced-sodium beef broth

1 cup water

1 (3-oz.) pkg. beef-flavor ramen noodles (reserve seasoning packet)

1 medium carrot, peeled and cut into matchsticks (1 cup)

Fresh cilantro
Directions

Sprinkle pork with salt and pepper. In a medium saucepan heat oil over medium-high. Add pork; cook and stir until browned and cooked through, about 3 minutes. Transfer pork to a plate.

Add broth and water to saucepan, stirring to scrape up any browned bits. Bring to boiling. Add ramen noodles; cook according to package directions, adding carrot the last minute of cooking. Stir in pork and 1/2 to 3/4 tsp. of the seasoning packet; discard remaining. Top servings with cilantro. Makes 2 servings.
