Ingredients

  • 1/4 cup sugar

  • 1 chai tea bag

  • 2 cups fresh blood orange juice

  • 1/2 cup bourbon (optional)

  • 1 (750-ml.) bottle Prosecco or other sparkling wine, chilled

  • 1 blood orange wheel or slices (optional)

Directions

  1. For chai simple syrup, in a small glass measuring cup stir together ¼ cup boiling water and the sugar until sugar dissolves. Add chai tea bag; cover and let steep 5 minutes. Remove tea bag. Cover and refrigerate at least 30 minutes or up to 3 days.

  2. For each drink, pour ¼ cup blood orange juice, 1 Tbsp. bourbon (if using), and 2 tsp. chai simple syrup into a champagne flute or wineglass. Top with 3 oz. Prosecco. If you like, garnish each glass with a blood orange wheel. Makes 8 cocktails.
