Starting with a can of condensed cream of chicken soup and a scoop of cheese dip, this throwback casserole brings back all the cozy comfort you felt in Grandma's kitchen growing up. It's the nostalgic hot dish that disappears as soon as it shows up at the neighborhood potluck, the side dish that everyone needs a scoop of at the holiday table. Yet it's easy enough to make on those extra busy weeknights when you need a quick side. With rice, cauliflower, and broccoli, you can just throw some cooked shredded chicken in to make it a all-in-one meal!

If you can’t find cream of chicken and mushroom soup, use one can each of cream of chicken soup and cream of mushroom soup.

Ingredients

  • Nonstick cooking spray

  • 4 Tbsp. salted butter, divided

  • 1 cup chopped onion

  • 1 tsp. minced garlic (2 cloves)

  • 2 cups chopped fresh broccoli florets

  • 2 cups chopped fresh cauliflower florets

  • 2 (10.5-oz.) cans condensed cream of chicken and mushroom soup

  • 1 cup processed cheese dip (such as Cheez Whiz)

  • 3/4 cup milk

  • 1 cup instant white rice

  • 1/4 tsp. black pepper

  • 1 (5-oz.) pkg. seasoned croutons, crushed

Directions

  1. Preheat oven to 350°F. Coat a 2-qt. baking dish with cooking spray. In a 12-inch skillet heat 2 Tbsp. of the butter over medium. Add onion. Cook and stir until tender, about 3 minutes. Add garlic; cook 1 minute. Stir in next five ingredients (through milk). Cook and stir until cheese dip melts. Stir in rice and pepper. Transfer to prepared dish.

  2. In a medium bowl melt remaining 2 Tbsp. butter in the microwave. Stir in croutons to coat. Sprinkle over broccoli mixture. Bake, uncovered, until hot and bubbling, 35 to 40 minutes. If necessary to prevent overbrowning, cover with foil the last 15 minutes.
