Fresh or cooked, radishes are a thing of beauty. Depending on the season, you can choose from a variety of different radishes ranging in shape, colors, and flavors. The great news is that most radishes are excellent for roasting. High heat mellows their characteristic sharp, peppery kick into a tender, sweet, and mild turnip-like flavor. For a final burst of flavor, a sprinkle of brown sugar and a touch of vinegar create the ideal blend of sweet and tangy.

Ingredients
-
1 lb. radishes, trimmed and scrubbed
-
1 Tbsp. olive oil
-
1/2 tsp. salt
-
1/4 tsp. black pepper
-
1/4 to 1/2 cup shredded white cheddar cheese (1 to 2 oz.)
-
1 Tbsp. sherry vinegar
-
1 Tbsp. packed brown sugar
-
1/2 tsp. chopped fresh dill or rosemary
Directions
-
Preheat oven to 425°F. Line a 15x10-inch baking pan with parchment paper. Place radishes in prepared pan. Drizzle with oil. Sprinkle with salt and pepper; toss to coat.
-
Roast until radishes are fork tender, 25 to 30 minutes. Use the bottom of a heavy glass or measuring cup to smash radishes to about 1/2-inch thickness. Carefully blot dry with paper towels. Sprinkle with cheese. Roast until edges of radishes are lightly browned, about 10 minutes more.
-
Drizzle with vinegar and sprinkle with brown sugar and dill.
