Fresh or cooked, radishes are a thing of beauty. Depending on the season, you can choose from a variety of different radishes ranging in shape, colors, and flavors. The great news is that most radishes are excellent for roasting. High heat mellows their characteristic sharp, peppery kick into a tender, sweet, and mild turnip-like flavor. For a final burst of flavor, a sprinkle of brown sugar and a touch of vinegar create the ideal blend of sweet and tangy.

Ingredients

  • 1 lb. radishes, trimmed and scrubbed

  • 1 Tbsp. olive oil

  • 1/2 tsp. salt

  • 1/4 tsp. black pepper

  • 1/4 to 1/2 cup shredded white cheddar cheese (1 to 2 oz.)

  • 1 Tbsp. sherry vinegar

  • 1 Tbsp. packed brown sugar

  • 1/2 tsp. chopped fresh dill or rosemary

Directions

  1. Preheat oven to 425°F. Line a 15x10-inch baking pan with parchment paper. Place radishes in prepared pan. Drizzle with oil. Sprinkle with salt and pepper; toss to coat.

  2. Roast until radishes are fork tender, 25 to 30 minutes. Use the bottom of a heavy glass or measuring cup to smash radishes to about 1/2-inch thickness. Carefully blot dry with paper towels. Sprinkle with cheese. Roast until edges of radishes are lightly browned, about 10 minutes more.

  3. Drizzle with vinegar and sprinkle with brown sugar and dill.
