This recipe for smothered green beans takes humble ingredients like bacon, onion, green beans, and potatoes, and transforms them into a side worthy of Sunday dinner. To round out the flavor and add an extra touch of smokiness, we're adding a smoked pork chop and Cajun seasoning. Serve the beans on their own or over rice for a complete meal.

3 slices bacon

8 oz. smoked bone-in pork chop

2 cups onion, coarsely chopped

2 Tbsp. all-purpose flour

1 Tbsp. minced garlic

2 tsp. Cajun seasoning

1/2 tsp. salt

1/2 tsp. ground black pepper

1/2 tsp. smoked paprika

2 lb. fresh green beans, trimmed and cut in 1 1/2-inch pieces, or frozen cut green beans

1 lb. round red potatoes, quartered

3 cups reduced-sodium chicken broth

2 Tbsp. cider vinegar

1 Tbsp. brown sugar

In a 6- to 8-qt. Dutch oven, cook bacon over medium 8 to 10 minutes or until crisp. Remove from Dutch oven; drain on paper towels.

Cut pork chop in cubes, reserving bone. Add pork cubes to the dutch oven. Cook 3 minutes or until browned. Using a slotted spoon, remove from Dutch oven; set aside.

Add onion to Dutch oven. Cook and stir 5 minutes or until softened.

Add flour, garlic, Cajun seasoning, salt, pepper, and smoked paprika. Cook and stir until fragrant and flour starts to brown, 2 to 3 minutes.

Return pork to the Dutch oven with the bone. Add green beans, potatoes, broth, vinegar, and brown sugar. Bring to boiling. Reduce heat to medium low. Cover, and simmer 30 minutes.

Uncover and simmer 15 minutes or until potatoes are tender, and liquid is thickened and reduced to desired consistency (green beans should be very tender to falling apart). Remove and discard bone. Crumble cooked bacon overtop and stir in to combine.
