Butternaise Is the Hottest New Condiment—and It Sold Out in 2 Minutes

There are few sandwiches as iconic as the grilled cheese, but despite its seemingly straightforward construction, it can be hard to get it just right. But Tillamook County Creamery Association has the answer. Enter Butternaise, a new condiment designed to end your grilled cheese woes and take sandwiches to the next level.

The Birth of Butternaise

Butternaise combines Tillamook Extra Creamy Unsalted Butter, KEWPIE Organic Mayonnaise, and a special spice blend, resulting in a condiment we can't help but add to our carts.

So what led to the development of Butternaise? Chef Josh Archibald, Tillamook's executive chef of culinary development, says it was simply in response to what customers wanted.

"As we explored making the perfect Tillamook grilled cheese sandwich, we asked consumers if they had a preference for butter or mayonnaise," Archibald says. "While the majority were butter, there was enough 'Team Mayo' that we wanted to find a way to bring both ingredients in a way that would really be a fun, delicious twist on this iconic comfort food."

Why Combine Butter and Mayo

Butternaise could be hard to wrap your head around if you've never tried mayo in crafting your homemade grilled cheese sandwiches. After all, both condiments serve essentially the same purpose—toasting your sandwich to perfection—so why bother using both?

"We love our butter, and in a grilled cheese, it does so much of the heavy lifting—it brings the rich, luscious mouthfeel that we want to the bread," Archibald says. "The mayo, well, it is kind of an unsung (until now!) hero. The mayo helps the bread toast more evenly and with a deeper color, and it also brings savory notes and gives the bread crispness, almost crouton-esque crunch that you can’t get without it. It really is a best of both worlds scenario when you blend them together."

And what sets Butternaise apart from using butter and mayonnaise separately is the hours of testing that went into getting the ingredient mix just right. "During development, we tested different ratios extensively until we got it perfect," Archibald says.

How to Use Butternaise

The directions for how to use Butternaise are to the point. "Applying the Butternaise liberally across the entire surface of the bread, you will get an even toast from top to bottom and end to end, giving you that satisfying crunch on the first bite and the last!" Archibald says.

Where to Find It

This spread has already taken the world by storm, selling out in two minutes on shop.tillamook.com. When asked about a potential restock, a spokesperson for Tillamook said there's a possibility. But in the meantime, fans won't go without Butternaise completely.

"We're absolutely blown aware by the response to Butternaise—selling out in under two minutes was beyond our wildest expectations. The love for grilled cheese is endless, but the supply of Butternaise was not. Given the interest and enthusiasm we're exploring our options and listening closely to what our community is telling us.
