Inspired by trendy whipped feta, this take features finely shredded Parmigiano-Reggiano, heavy cream, and ricotta. The rich, fluffy spread has the aged cheese’s sharp flavor and a creamy mouthfeel. Smear over crostini and finish with balsamic, olive oil, and flaky salt.

Ingredients

  • 1/2 cup heavy cream

  • 1/2 cup ricotta cheese

  • 2 oz. Parmigiano-Reggiano cheese, finely shredded

  • Crostini, crackers, and/or bread slices

  • 1 Tbsp. balsamic glaze (optional)

  • Fresh basil leaves (optional)

Directions

  1. In a large chilled bowl beat cream until medium stiff peaks form (tips curl just slightly), 5 to 7 minutes.

    Test Kitchen Tip: Using a chilled bowl allows the fat in the cream to stay cold, resulting in the airy, fluffy texture you want.

  2. Add ricotta cheese; beat on low until combined. Add Parmigiano-Reggiano; beat until fully incorporated. (Refrigerate in an airtight container up to 3 days.)

  3. To serve, spread mousse on crostini. If you like, drizzle with balsamic glaze and extra virgin olive oil. Sprinkle with a pinch of sea salt and cracked black pepper. If you like, garnish with basil leaves. Makes 1 3/4 cups mousse.
