There's nothing I look forward to quite like a slice of homemade pie. I love apple and pumpkin during the fall, chocolate pie during the winter months, and fresh fruit pies in summer. And I'm always on the hunt for new recipes. So when I stumbled across Laura Bush's recipe for triple citrus pie, I immediately added it to my list. Here's what I thought of the classic pie.

How to Make Citrus Pie

Here's a quick look at how to make the former First Lady's 8-ingredient citrus pie recipe.

  1. Start by combining six egg yolks with freshly squeezed lemon juice, lime juice, and orange juice. Whisk until well mixed. Add in a can of sweetened condensed milk and stir until mixed.
  2. Pour the filling into a premade or purchased graham cracker crust.
  3. Bake and remove from the oven to cool. Once cooled, chill the pie in the fridge for at least 2 hours.
  4. To serve, top the pie with homemade whipped cream and cut into slices.

Tips for Making Homemade Citrus Pie

Make this creamy pie at home? Keep these helpful tips in mind.

  • Swap out the citrus. If you don't have all three fruits, the pie will work with the same amount of juice from just one or two types of citrus. You could also try adding in Meyer lemon, key lime, or grapefruit juice instead.
  • Get creative with the crust. A standard graham cracker crust is delicious here, but the dessert would also be great with a pretzel crust. If you like nuts, try adding crushed almonds or pecans to your graham cracker crust.
  • Make sure it's fully cooked. The original recipe called for a baking time of 15 minutes. Our pie took 30 to 35 minutes to be fully set.
  • Don't skimp on the chill time. We liked this pie best once it had sat in the fridge overnight.
  • Sweetened whipped cream is the perfect topping for the custardy pie. Try adding a bit of lemon or lime zest to the whipped cream for even more citrus flavor.

I loved how bright and citrusy this pie tasted. The mix of lemon, lime, and orange is a great combination of tart and sweet, while the whipped cream on top added just the right amount of creaminess. It's easy to prep and make ahead for parties, and I'm planning on bringing it to my next summer barbecue. This citrus pie has everything I love about a summer dessert, and I know it will be a hit.
