1 1/2 lbs. beef sirloin steak, cut in bite-size pieces

3 Tbsp. flour

3 Tbsp. butter, divided

1 Tbsp. olive oil

12 oz. button mushrooms, sliced

1/4 cup dry red wine

2 cloves garlic, minced
-
1 (14.5-oz.) can beef broth
-
1 Tbsp. cornstarch

2 tsp. Dijon-style mustard
-
1 1/2 tsp. Worcestershire sauce

2 Tbsp. heavy cream

Mashed potatoes

Chopped fresh parsley

In a medium bowl toss the beef and flour together to coat.

In an extra-large skillet, heat 1 Tbsp. of the butter and the oil over medium. Add the beef and cook about 6 minutes or until browned on all sides but interior is still pink, stirring occasionally. Remove from pan and set aside.

Add 1 Tbsp. of the butter to the skillet. Add the mushrooms; cook over medium just until tender, about 4 minutes. Remove the mushrooms from the skillet; set aside. Add wine to pan and deglaze, scraping any browned bits from the skillet for about 1 minute. Add garlic and continue gently simmering until reduced by about half.

In a small bowl whisk together 2 Tbsp. beef broth and cornstarch. Add the remaining beef broth, cornstarch slurry, mustard, and Worcestershire sauce to the skillet. Stir to combine. Add the beef and mushroom mixture to the skillet. Cook, uncovered, over medium-low 10 to 15 minutes or until the beef is just cooked through, stirring occasionally. Stir in cream. Remove from heat. Whisk in the remaining 1 Tbsp. butter.

Serve with hot mashed potatoes. Sprinkle with parsley.
