Whether for lunch, a side, or large dinner main, I eat a lot of fresh salads. But when you eat the same mixed greens with oil and vinegar or ranch multiple times a week, it can get kind of boring. Enter this amped up vinaigrette with freshly grated Parmigiano-Reggiano cheese. The nutty, salty cheese pairs beautifully with fresh herbs, oil, and garlic. Drizzle this herb-flecked dressing over greens, roasted or grilled veggies, and grain salads.

Ingredients

2 oz. Parmigiano-Reggiano cheese, freshly grated (1/2 to 2/3 cup)

1/2 cup extra virgin olive oil

1/3 cup champagne vinegar or white wine vinegar

1 Tbsp. chopped fresh herbs (thyme, oregano, or basil) or 1/2 tsp. dried herbs

1 Tbsp. Dijon mustard

2 tsp. honey

2 garlic cloves, minced
Directions
In a small food processor or blender combine Parmigiano-Reggiano, olive oil, champagne vinegar, thyme, mustard, honey, garlic, and 1/8 tsp. freshly ground black pepper. Process until smooth. Serve immediately (or refrigerate, covered, up to 5 days for fresh herbs or 1 week for dried herbs). Whisk before using.
