Frozen clementines provide chilling replacements for ice cubes in this coconut and citrus quencher—plus they won’t dilute the drink. Fresh mint completes the pumpkin look; dunk it into the liquid to bring out its herbaceous flavor.

Keep these helpful tips in mind when making this Halloween mocktail recipe.

  • If you're having a party, it's easy to prep this drink ahead. Peel and freeze your tangerines several days in advance. Make your coconut water mixture the morning of your party. Simply assemble the drink and top with sparkling water when you're ready to serve.
  • This is the place to use freshly-squeezed lime juice rather than bottled options.
  • Want to make a cocktail version? Add 1 shot of your favorite vodka. Increase the sparkling water to taste.
  • Don't have fresh mint? Skip the garnish or top with a sprig of fresh basil instead.

Ingredients

  • 1 small clementine or tangerine, peeled

  • 1 cup unsweetened plain or flavored coconut water

  • 1 cup sparkling water with tangerine flavor

  • 2 tsp. lime juice

  • 2 tsp. honey

  • Fresh mint sprig

Directions

  1. Prep Clementines

    Place peeled clementine on a plate or in a resealable plastic bag. Freeze at least 4 hours.

  2. Mix Mocktail Ingredients

    In a large glass stir together coconut water, sparkling water, lime juice, and honey until honey is dissolved. Remove frozen clementine from freezer. Place mint sprig on top of clementine and carefully add to glass. Makes 1 serving.
