To determine the best hole-in-the-wall pizza joints in every state, we first defined what it means to be a hole-in-the-wall restaurant. As such, we favored restaurants that are smaller, older, and especially those that focus on pizza over ambiance or dining experience. What constitutes a hole-in-the-wall restaurant also varies by location: more rural pizza places tend to be larger than their inner-city counterparts.
