1 (14.5 oz.) can reduced-sodium beef or chicken broth

1 cup water

6 to 8 oz. frozen Italian-style or beef meatballs

1 tsp. dried Italian seasoning

1/2 cup dried orzo pasta

1 cup fresh baby spinach

Grated or shaved Parmesan cheese (optional)
Directions

In a medium saucepan combine broth, water, meatballs, and Italian seasoning. Bring to boiling; reduce heat. Simmer, covered, 5 minutes. Stir in orzo; cook until meatballs are cooked through and orzo is done, about 10 minutes more. Stir in spinach. If you like, sprinkle with Parmesan. Makes 2 servings.
