Combine fresh zucchini ribbons and halved cherry tomatoes with olives and feta for a substantial base in this lettuce-free salad. We love it with the za'atar seasoning in the vinaigrette—a tangy and earthy dressing that amplifies the Mediterranean flavors with the olives and feta cheese.
Test Kitchen Tip: Run a vegetable peeler down the length of the zucchini to create ribbons. You can keep or discard the outer green skin.
What Is Za'atar Seasoning
Za'atar seasoning is a Middle Eastern and Mediterranean seasoning mix of dried herbs like oregano, thyme, and marjoram and additional components such as sesame seeds, sumac, coriander, or cumin. It's earthy and flavorful, with a little extra crunch from the seeds and sumac.
