Whether it's for a holiday party or you're simple feeling festive on a weeknight, roasting goat cheese is never a bad idea. This savory recipe comes together with simple grocery store staples and is ready in under 40 minutes. We recommend using a ceramic or cast-iron baking dish for even heat distribution throughout the roasting process (no hot spots wanted here). First layer in vegetables then roast. Add on flavor boosters like olives, next, then scoop on goat cheese. Lastly, roast again and top with fruit and herbs (drizzle with honey for extra sweetness).

Ingredients

  • 3 small shallots, peeled and quartered lengthwise

  • 1/2 cup thin onion wedges

  • 5 cloves garlic, peeled and sliced

  • 2 Tbsp. olive oil

  • 2 Tbsp. sherry vinegar

  • 1 tsp. fresh rosemary, chopped

  • 1/4 tsp. black pepper

  • 1/2 cup assorted high-quality black and green olives, pitted and halved

  • 1/4 cup dried apricots, chopped

  • 1 (8-oz.) log goat cheese

  • Honey (optional)

  • Crackers or crostini

Directions

  1. Preheat oven to 400°F. In a 1½-qt. ceramic or cast-iron baking dish arrange shallots, onion, and garlic. Drizzle with oil and vinegar. Sprinkle with rosemary and pepper. Roast until onion is tender, 20 minutes.

  2. Add olives and apricots to dish with onion; stir to combine. Place scoops of goat cheese over mixture in dish. Roast until cheese is soft and onion has started to brown, 10 minutes more. If you like, top with additional chopped dried apricots and rosemary and drizzle with honey. Serve with crackers.
