This Budget Beef Cut Delivers a Holiday Spread Worthy of Tenderloin

Also known as “chuck shoulder tender,” “shoulder tender,” or “teres major,” this small cut is taken from the shoulder area of a cow. It’s relatively lean and flavorful, which makes it a desirable choice for a variety of cooking methods.
How to Make Roasted Broccolini
Line a 15x10-inch baking pan with foil. In a very large bowl whisk together 2 Tbsp. olive oil and 1/4 tsp. each salt and black pepper. Add 2 bunches Broccolini, trimmed (about 1 lb.), and 1 cup sliced shallots; toss to coat. Spread Broccolini mixture in a single layer in prepared pan. Roast, stirring once, until Broccolini is crisp tender and lightly browned, 12 to 15 minutes. Makes 6 servings.
