Frozen pancakes get a major upgrade in this delightful blueberry brunch bake. Rows of pancakes with bursting blueberries and a golden streusel top, this make-ahead dish is sure to be a hit. Serve with fresh blueberries, syrup, and just a touch of lemon zest.

Ingredients

  • 24 (4-inch) frozen buttermilk pancakes, thawed

  • 1 1/2 cups fresh or frozen blueberries

  • 1 tsp. lemon zest

  • 6 eggs

  • 1 1/2 cups milk

  • 1 cup heavy cream

  • 1 cup sugar, divided

  • 2 tsp. vanilla

  • 3/4 cup all-purpose flour

  • 6 Tbsp. salted butter

  • 1/4 tsp. ground cinnamon

  • Warm maple syrup (optional)

Directions

  1. Cut pancakes in half and arrange, cut edges down, in two rows in a 3-qt. rectangular baking dish. In a small bowl toss blueberries with lemon zest; sprinkle over and between pancakes.

  2. In a large bowl lightly beat eggs. Whisk in milk, cream, 1/4 cup of the sugar, and the vanilla. Pour over pancakes. Press down lightly with the back of a large spoon until pancakes are moistened. Cover and chill at least 4 hours or overnight.

  3. For streusel, stir together remaining 3/4 cup sugar, the flour, melted butter, and cinnamon. Cover and chill at least 4 hours or overnight.

  4. Preheat oven to 350°F. Crumble streusel mixture over top of pancakes. Bake, uncovered, until set, 50 to 55 minutes. Let stand 5 minutes before serving. If you like, serve with syrup, additional fresh blueberries, and/or lemon zest.
