24 (4-inch) frozen buttermilk pancakes, thawed
-
1 1/2 cups fresh or frozen blueberries
-
1 tsp. lemon zest
-
6 eggs
-
1 1/2 cups milk
-
1 cup heavy cream
-
1 cup sugar, divided
-
2 tsp. vanilla
-
3/4 cup all-purpose flour
-
6 Tbsp. salted butter
-
1/4 tsp. ground cinnamon
-
Warm maple syrup (optional)
Directions
-
Cut pancakes in half and arrange, cut edges down, in two rows in a 3-qt. rectangular baking dish. In a small bowl toss blueberries with lemon zest; sprinkle over and between pancakes.
-
In a large bowl lightly beat eggs. Whisk in milk, cream, 1/4 cup of the sugar, and the vanilla. Pour over pancakes. Press down lightly with the back of a large spoon until pancakes are moistened. Cover and chill at least 4 hours or overnight.
-
For streusel, stir together remaining 3/4 cup sugar, the flour, melted butter, and cinnamon. Cover and chill at least 4 hours or overnight.
-
Preheat oven to 350°F. Crumble streusel mixture over top of pancakes. Bake, uncovered, until set, 50 to 55 minutes. Let stand 5 minutes before serving. If you like, serve with syrup, additional fresh blueberries, and/or lemon zest.
